Spectacle shortbread with raspberry-violet jam

For this recipe, you will need: 

  • 500g of flour
  • One vanilla pod (or 1 sachet vanilla sugar)
  • 200g softened butter
  • 100g unrefined cane sugar (or caster sugar)
  • powdered sugar for the finish
  • 2 eggs 
  • Raspberry-Violet jam by Confiture Parisienne

Raspberry - Violet jam

Recipe steps:
  1. In a bowl, add the kneaded butter, cane sugar, vanilla pod and flour. 
  2. Mix, then add 2 eggs.
  3. Work the dough into a ball with your hands.
  4. Sprinkle the work surface with flour.
  5. Using a rolling pin, roll out the dough.
  6. Form circles using the cookie cutter of your choice.
  7. On half of them, make two small holes as if to make eyes.
  8. Bake for 10 to 15 min at 150° C.
  9. Laisser refroidir puis mettre de la confiture de framboise sur les sablés pleins.
  10. Top with the perforated cookies, then sprinkle with powdered sugar.
  11. Déguster !
