In 2012, Valrhona invented the fourth color of chocolate: blond. During a pastry demonstration, Frédéric Bau left some white chocolate in a bain-marie for a little too long; the result was surprising: the chocolate, having become blond, released a delicate aroma of shortbread and caramelized milk. It took 8 years of research to perfect the Dulcey recipe, which today allows us to push the limits of creativity!
