The long-awaited holidays begin tonight, and so do the good times spent with family. It's the perfect opportunity to make this delicious Christmas brioche recipe with our Chestnut - Pear - Tonka Bean jam .
The ingredients
500g of T45 flour
10g instant baker's yeast
200g of whole milk
60g of sugar
160g softened butter
2 eggs
6g of salt
30g of sugar
40g of water
2 jars of chestnut and pear jam
Recipe
1. Dissolve the yeast in lukewarm milk and set aside for 10 minutes
2. Meanwhile, mix the sugar, salt and flour
Add the eggs, milk and yeast and knead for 10 minutes
3. Add the cut butter and knead until the dough comes away from the sides of the bowl. Place in a clean bowl and cover. Let rest for 2.5 hours in a warm place or overnight in a cool place.
4. Roll out into 4 discs of the same size, flouring the work surface.
5. Spread jam on the first 3 discs and cover with the last disc
6. Divide your circle into 16 parts without cutting to the center
7. Turn 2 strips in the opposite direction by making 3 turns
8. Join the 2 strips together and repeat the operation around the entire circle.
9. Cover and leave to rise for 1 hour in a warm place.
10. Brush with a little milk and bake for 25-30 minutes in an oven preheated to 180 degrees
11. Prepare the syrup by bringing the water and sugar to a boil.
12. Remove the brioche from the oven and brush with syrup.
