Preparation of the black fig jam insert:
1 rectangular mold
Place the jar of Black Fig Sweet Spices in a rectangular mold in the freezer.
Making the shortcrust pastry:
1 pinch of salt
40g of sugar
75g butter
150g of flour
1 egg
1 rectangular cookie cutter
1. Take the butter out of the fridge 20 minutes before serving. Cut the butter into small pieces.
2. Put all the ingredients together in the blender for about 1 minute, or mix everything in a bowl. This should form a smooth ball.
3. Let the dough rest for about thirty minutes in the refrigerator.
4. Preheat your oven to 180 degrees.
5. When the dough has rested well, take a rectangular cookie cutter and cut out a rectangle.
6. Place the dough on baking paper. Bake the dough for 8 minutes.
Making the vanilla/chestnut/mascarpone mousse:
510g of chestnut cream
500g of mascarpone
2 eggs
100 g white sugar
1 vanilla pod
1 sheet of gelatin e
1. Separate the whites from the yolks. Set the whites aside.
2. Whisk the egg yolks with the sugar and the deseeded vanilla pod for 1 minute. Stir in the mascarpone.
3. Soak the gelatin sheet in cold water. Once rehydrated, melt the sheet in a saucepan over low heat.
4. Add the melted gelatin sheet to your mixture, then add the chestnut cream.
5. Beat the egg whites until stiff. Then gently fold them into the mixture using a spatula or rubber spatula.
Assembling the log:
1 log mold
1. Insert a little mousse into the bottom of your log mold.
2. Place the black fig jam insert.
3. Add a layer of mousse.
4. Insert the shortcrust pastry.
5. Continue with another layer of mousse.
6. Tap your mold to avoid air bubbles.
7. Place in the refrigerator for at least 12 hours.
Serve on Christmas Eve on a pretty golden platter for a guaranteed starry effect!
