Victoria pineapple carpaccio with Travel Jam - FeGH

PINEAPPLE CARPACCIO VICTORIA CORIANDER CRYSTAL

For a refreshing dessert sufficient for two - Fegh


For this recipe, you need:

  • 1 jar of travel jam Confiture Parisienne
  • 1 bunch of large coriander leaves
  • 1 ripe, unblemished Victoria pineapple
  • 1 egg white, whipped until frothy
  • 1 juicy lime with smooth skin
  • tray of edible flowers: pansies, nasturtiums, etc.

  • Steps:

    1. Peel the pineapple and cut it into very thin slices using a sharp knife.

    1. The day before, prepare the crystallization. Whisk the egg white until frothy, dip the coriander leaves into the frothy egg white and then into the sugar, tap off the excess, and let it dry on a wire rack in a draft.

    1. Brush with Travel Jam, zest the lime with a Microplan mandolin, sprinkle with lemon juice, arrange the crystallized coriander leaves with a few flowers (optional)...
