Pistachio Holiday Cookies

Ingredients (for about 12 cookies):

  • 150g of flour
  • 100g unsalted butter, softened
  • 80g caster sugar
  • 50g brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 100g shelled pistachios, coarsely chopped
  • 1 jar of pistachio spread
  • 1/2 tsp baking soda
  • 1 pinch of salt

The steps of the recipe:

  1. Prepare the dough: In a large bowl, cream the butter with the powdered sugar and brown sugar until light and fluffy. Add the egg and vanilla extract and mix well. Then, stir in the pistachio spread and mix until well combined.

  2. Add the dry ingredients: In a separate bowl, sift together the flour, baking soda, and a pinch of salt. Add this mixture to the first bowl, stirring until you get a smooth dough. Add the chopped pistachios and mix gently.

  3. Refrigerate the dough: Form balls of dough and place them on a baking sheet lined with parchment paper. Place the sheet in the refrigerator for about 30 minutes to firm up the dough.

  4. Preheat the oven: Meanwhile, preheat your oven to 180°C.

  5. Baking: Bake the cookies for 10 to 12 minutes, until lightly browned around the edges. They will continue to bake as they cool, so don't leave them in the oven for too long.

  6. Decoration: Once cooled, decorate the cookies with a little pistachio spread, melting it slightly if necessary.
