Ingredients
- 60g icing sugar + 2 tablespoons
- 2 eggs
- 60g caster sugar
- Raspberry Jam Macaron
- 150g mascarpone
- 15cl of whole liquid cream
- 1 tablespoon lemon juice + zest
- A pinch of vanilla powder
- Some fresh raspberries
Process:
- Start by whisking your egg whites until stiff, then add the caster sugar 3-4 times.
- Once the sugar is well incorporated, add the icing sugar and lemon juice and beat for another 5 minutes until your meringue is ready.
- Using a piping bag, form your pavlovas on a baking sheet lined with parchment paper and bake for 2 hours in an oven preheated to 90°.
- Meanwhile, whip the cream with 2 tablespoons of icing sugar, the mascarpone and the vanilla powder.
- Once you've removed your meringues from the oven, you can begin the preparation. Add the whipped cream, your homemade Raspberry Macaron jam, the raspberries and the lemon zest and finally enjoy!
