Spring is finally here! To celebrate the arrival of the warmer weather , discover this recipe for Pavlovas with Raspberry Violet Jam . A delicious dessert to enhance your family meals.

For this recipe, you need:
- 60g of icing sugar for the meringue + 2 tablespoons for the whipped cream
- 2 eggs
- 60g of caster sugar
- 150g of mascarpone
- 15cl of whole liquid cream
- 1 tablespoon of lemon juice + zest
- 1 pinch of vanilla powder
- Some fresh raspberries
- 1 jar of Raspberry Violet jam
The steps of the recipe:
1. Preheat your oven to 90 degrees .
2. To begin, separate the egg whites from the yolk and place them in a bowl. Beat the egg whites until stiff and gradually add the caster sugar .
3. Once the sugar is well mixed, add the icing sugar and lemon juice then beat for another 5 minutes until your meringue is ready.
4. Using a piping bag, form your Pavlovas on a baking sheet lined with parchment paper and place in the oven.
5. Cook for 2 hours .
6. Meanwhile, whip the liquid cream with 2 tablespoons of icing sugar , the mascarpone and the vanilla powder .
7. Once your meringues are cooked, you can start dressing them . Gently place your whipped cream and the Raspberry Violet jam on top. Mix lightly. using a skewer to harmonize everything.
8. Garnish the pavlovas with fresh raspberries and lemon zest .
If during your preparation, some Pavlovas have broken, you can reuse them by crumbling them in a bowl with whipped cream, Raspberry Violet jam with a few raspberries!
