The steps of the recipe:
- Crumble the baker's yeast into a bowl. Add 100g of flour and 4 tbsp of warm milk, then mix well and let it sit at room temperature for 2 hours.
- Pour the remaining flour into a large bowl. Add the sugar and salt, and mix well. Make a well in the center. Pour in the eggs and stir with a whisk. Add the sourdough starter and milk, mixing with a whisk. You should have a smooth dough. Let it rise again for a few hours, or even overnight.
- After this rest, knead the dough again and roll it out on the work surface or on a floured board.
- Shape circles 6 cm in diameter using a cookie cutter.
- Place 1 tablespoon of jam in the center of each circle and cover with a second round of dough to form a doughnut. Pinch the edges together well (with water or milk if necessary). Let stand for 45 minutes at room temperature.
- Heat some frying oil in a saucepan and dip the donuts inside.
- When they are golden brown, drain them on paper towels and sprinkle them with icing sugar. Enjoy them warm or cold!
