Combining the rich taste of homemade jam with the melt-in-your-mouth texture of shortbread, these biscuits will be a delight for your autumn snacks. Perfect with tea or coffee, these fig jam biscuits evoke the sweetness of autumn days.

The steps of the recipe:
- Prepare the dough : In a large bowl, mix the softened butter and sugar until creamy. Add the egg and vanilla extract, then mix again.
- Add the dry ingredients : Sift the flour and a pinch of salt into the creamy mixture. Knead until you get a smooth dough. If the dough is too sticky, add a little more flour.
- Refrigerate the dough : Form the dough into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for about 30 minutes.
- Preheat the oven : Preheat your oven to 180°C.
- Roll out and cut : On a floured work surface, roll out the dough to about 5 mm thick. Use a cookie cutter to cut out shortbread shapes. For each shortbread, cut out two shapes: one for the top and one for the bottom.
- Top with fig jam : On half of the shortbread, place a small spoonful of black fig, pepper and blackcurrant jam . Cover with the other half of the shortbread.
- Baking : Arrange the shortbread on a baking sheet lined with parchment paper. Bake for 12 to 15 minutes, until lightly golden. Let cool.
- Decoration : Once the shortbread has cooled, sprinkle it with icing sugar if desired.
