
Ingredients :
For the macaron shells:
- 200 g icing sugar
- 125 g of almond powder
- 110g egg whites (about 3 eggs)
- 30 g caster sugar
- Food coloring (optional, to make the macaron shells "blue, white, red" or gold to recall the Eiffel Tower)
For the filling:
- 3 to 4 tablespoons of Eiffel Tower jam
- 100g mascarpone (or light buttercream for a creamier effect)
Preparation :

Prepare the macaron shells :
- Sift together the icing sugar and almond powder to avoid lumps.
- Beat the egg whites with a pinch of salt until stiff. When the whites begin to stiffen, gradually add the caster sugar and continue beating until they form stiff, glossy peaks.
- Gently fold in the icing sugar and almond powder mixture in two batches with a spatula, taking care not to break the egg whites.
- If you want colored shells, add a few drops of food coloring at this point.
- Form small mounds of dough on a baking sheet lined with parchment paper, trying to give them a slightly round shape (we're making macaroons, not the Eiffel Tower, but we can always dream!).
- Let the shells sit for 30 minutes to 1 hour to form a light crust on the surface.
- Preheat your oven to 150°C and bake the shells for 12-15 minutes, then let them cool.

Prepare the filling :
- In a small bowl, mix the strawberry and rosemary jam with the mascarpone (or buttercream) to make a soft and creamy filling. If you prefer a sweeter taste, you can add a little honey.
- Make sure the texture is smooth and even so that it spreads easily on the macaron shells.

Assembling the Eiffel macarons :
- Take two macaron shells, and on one of them, place a spoonful of the Eiffel Tower jam filling.
- Gently press the two shells together to form your macaron.

Decoration (optional but fun) :
- For an "Eiffel Tower" effect, you can decorate the shells with a little icing sugar to recall the Parisian mist or use a little melted chocolate to draw small "structures" in the shape of the Eiffel Tower on the top of the macarons.
- If you have a little imagination, you could even try making macarons in the shape of little Eiffel Towers (or almost!).
Trick :
- For an even more Parisian dessert, you can accompany your macarons with a small glass of champagne or a cup of French tea .
