Candlemas Pancake Recipe

Here's a perfect pancake recipe for Candlemas, with a choice of pistachio or hazelnut spread!

Ingredients for the pancake batter:

  • 250 g of flour
  • 2 eggs
  • 50 g melted butter
  • 500 ml of milk
  • 1 tablespoon of sugar
  • 1 tablespoon of rum or vanilla (optional)
  • A pinch of salt

Ingredients for the filling:

  • Pistachio or hazelnut spread (depending on your choice)
  • Fresh fruit (strawberries, bananas, or raspberries) – optional
  • Whipped cream (optional)

Preparation of pancakes:

  1. Prepare the dough :

    • In a large bowl, sift the flour and add a pinch of salt.
    • Make a well in the center and crack the eggs into it.
    • Start mixing with a whisk, then gradually add the milk to avoid lumps.
    • Add the sugar, melted butter, and rum or vanilla if desired. Mix well until you get a smooth, even dough. Let the dough rest for 30 minutes to allow it to become even more fluid.
  2. Cooking the pancakes :

    • Heat a non-stick skillet over medium heat and add a knob of butter or oil.
    • Pour a small ladle of batter and swirl the pan to distribute the batter evenly.
    • Cook for about 1 to 2 minutes, until the crepe is golden brown, then carefully flip it over with a spatula and cook the other side for another 1 to 2 minutes.
    • Repeat the operation until the dough is used up.
  3. Fill the pancakes :

    • Spread a nice layer of pistachio or hazelnut spread on each hot crepe.
    • For an even more indulgent effect, add fresh fruit (strawberries, bananas or raspberries), a little whipped cream, and some flaked almonds or crushed hazelnuts.
