Brioche framboise pistache

Raspberry and pistachio brioche

For breakfast or as a snack, there's nothing better than a delicious brioche to satisfy your sweet tooth!

Ingredients:
Flour 300g
Milk 125ml
Butter 150g
Sugar 50g
Egg 1 piece
Baker's yeast 15g
Salt 3g
Egg yolk 20g
Cream 35% 30g
1 jar of Parisian Raspberry Jam
1 jar of Pistachio Orange Blossom Spread with Parisian Jam
Process:
 
1. In the bowl of your food processor (or in a bowl if you are making your brioche by hand), add the milk, sugar, egg, salt, softened butter cut into pieces, flour and baker's yeast. Knead everything for 10 to 15 minutes, until you obtain a smooth, soft and sticky dough.
 
2. Cover the latter with cling film or a clean cloth, and let it rest for 1.5 hours at room temperature, until it doubles in volume.
3. Fold the edges inside the dough to expel any air, then roll it out into a rectangle. Pour in the equivalent of a jar of Raspberry Parisian Jam, spread the jam evenly, and roll the dough into a large sausage shape. Chill for 10 minutes.
 
4. Cut the dough into equal-thick pieces and place them in a buttered and floured baking pan. Lightly brown the top of the brioche by brushing it with the egg yolk and 35% cream mixture. Let the dough rest for about 15 minutes.
 
5. Bake the brioche at 180°C for about 35 minutes until golden brown.
 
6. Let the brioche cool on a wire rack and pipe some Pistachio Spread on top.
 
7. Enjoy the brioche as a snack with a hot drink.
